I love hot sandwiches, and this is a relatively lazy one. I’m working up to trying one of Nicole’s recipes, but in the meantime—

Portobello sandwich for one
More or less from Nigel Slaters superb Real Food, which has an entire sandwich section.

2–3 portobello mushrooms
2 cloves of garlic, crushed
some softened butter
fresh parsley or thyme, chopped
a nice fresh bap, or slice of baguette
hot dijon mustard
some pepperish greens, like rocket

a lemon wedge
salt and pepper

Mash up the butter with the garlic and herbs, then spread liberally on top of the mushrooms. Grill the mushrooms at 200C for ten minutes or so, until they’re soft and juicy, then slice into thick pieces. Slice open the bread and smear one side with mustard, the other with the juices from the mushroom pan. Layer with greens and mushroom slices. Give a squeeze of lemon and a good grind of salt and pepper.
